What is Low Carb?

Low Carb is a functional food strategy that proposes to reduce the intake of carbohydrates present in foods. The main sources of this food group are sugar, wheat, and all foods with a high glycemic index, found in cakes, sweets, some fruits, rice, potatoes, beans, flour, pasta, breads and derivatives.

The Low Carb style does not defend just eating vegetables, although these are the basis of this food philosophy , it also allows high protein foods like all meats, all fish, seafood, eggs, cheeses and oilseeds (nuts and seeds) that are part of the Low Carb style. According to nutritionists, these proteins are key nutrients to our body. They provide amino acids that are important for structural, motor, and metabolic functions. These same proteins found in the Low Carb food philosophy are essential components of muscles and collagen formation. They also help in the production of hormones, enzymes and in the regulation of immune functions. Still according to nutritionists virgin olive oil, animal fat, coconut oil, oilseeds and avocado are fats considered healthier because they are non saturated. Researches indicate that the consumption of these foods prevents cardiovascular diseases and strokes.

In summary, this nutritional strategy, which has been widely used, is based on a reduction and not on a restriction of carbohydrates, leading to a change in "glycocentric" metabolism to "adipocentric" metabolism, since the main energy source, ceases to be the glucose, and happens to be the fatty acids and the ketonic bodies. Low Carb guarantees the energy value through proteins and fats. Studies have shown efficiency in this type of strategy, in decreasing body weight, increasing levels of HDL (good cholesterol), decreasing LDL (bad cholesterol), decreasing triglycerides, glycemic control and lowering blood pressure, thus reducing the risk of strokes and atherosclerosis, being also a strong ally for prevention and remission of Diabetes.

According to the recipe you need the following ingredients for the Low Carb Pizza base (approx. 225g) wish are not included: 2 tsp. of olive oil, 150 ml of warm water. Mix all ingredients by hand or with a mixer into a smooth dough. Preheat the oven. Cover the dough with a kitchen towel and allow it to rise in a warm place for about 25 min. Then spread evenly onto a baking tray lined with baking paper. Top with preferred topping and bake at mid-height in a pre-heated oven at 200°C or 180°C (circulating air) for approx. 25-30 minutes.
